Mini pumpkin pancakes
These spiced mini pancakes will start your day off right.
Ingredients
Yield: 24 mini pancakes
• 1 1/2 cups of milk
• 1 cup pumpkin puree
• 1 egg
• 2 tablespoons vegetable oil
• 2 tablespoons cider vinegar
• 2 cups of flour
• 3 tablespoons brown sugar
• 2 teaspoons baking powder
• 2 teaspoons baking soda
• 1 teaspoon allspice
• 1 teaspoon ground cinnamon
• 1/2 teaspoon nutmeg
• 1/2 teaspoon grated ginger
• 1/2 teaspoon salt
• 2 tablespoons butter
• 1/4 cup powdered sugar
Directions
1. Combine the wet ingredients and dry ingredients in separate bowls. Pour the wet ingredients into the dry ingredients and gently mix until smooth.
2. Melt the butter in a non-stick pan. Spoon two tablespoons of mixture into the pan per pancake. Cook for about 2 minutes on each side until golden brown.
3. Sprinkle with powdered sugar before serving.
