Mini Quiches with Ham and Swiss Cheese
These savory mini quiches are simple to prepare and make a delicious addition to any brunch, gathering, or light meal.

- 6 eggs
- 3½ ounces cooked ham, finely diced
- 3½ ounces Swiss cheese, finely diced
- ½ cup 35% heavy whipping cream
- Salt and pepper, to taste
- 1 package of 8 puff pastry tart shells
- A few sprigs of fresh thyme
Directions
- Preheat the oven to 400°F.
- In a large bowl, crack the eggs and whisk lightly. Add the ham, Swiss cheese, cream, salt and pepper, then mix well.
- Pour the egg mixture into the tart shells, filling each about three-quarters full.
- Bake for 18 to 22 minutes, or until the pastry is golden brown and the egg filling is lightly browned.
- Sprinkle with fresh thyme just before serving.
Serve warm and enjoy these flavorful bite-sized quiches.
