Spicy Grilled Halloumi Cheese Recipe

Ingredients

- 1 cup + 1 tablespoon water
- 1 cup rice vinegar
- 1 cup sugar
- 1 tablespoon ketchup
- 1 tablespoon fresh ginger, finely grated
- 1 or 2 teaspoon(s) red pepper flakes
- 1 clove garlic, finely chopped
- 16-ounce block halloumi cheese
- 2 teaspoons cornstarch
- A few small fresh red chillies, sliced (for garnish)
Directions
- Bring the cup of water, vinegar, sugar, ketchup, ginger, red pepper flakes, and garlic to a gentle boil in a small saucepan. Ensure all the sugar has dissolved, then let it cool completely.
- Slice the cheese in half lengthways. Then, cut each half in half to make four large sticks.
- Place the cheese in a bowl and cover it with the marinade. Let it marinate in the fridge for a few hours or overnight.
- Drain the cheese, making sure to keep the marinade.
- In a small saucepan, bring the marinade to a boil. Dissolve the cornstarch in a tablespoon of water. Gradually pour the mixture into the marinade and simmer gently until the mixture thickens.
- Thread the cheese pieces onto wooden skewers—grill on all sides of the barbecue or in a pan on the stovetop.
- Pour the marinade over the cheese skewers, garnish with chopped red chilies, and serve warm.
