With its golden roasted squash, protein-packed chickpeas, and zesty lemon-honey dressing, it delivers a fresh twist on cool-weather cooking.

It’s also surprisingly easy to prepare — just roast the squash, mix up a simple dressing, and toss everything together. The result? A cozy, satisfying salad that looks as good as it tastes.

Why it works

Roasting the butternut squash brings out its natural sweetness while giving the edges a golden finish. Chickpeas add plant-based protein and a pleasant bite, while cherry tomatoes give a pop of acidity and color. Roasted Squash Salad with Chickpeas and Cherry Tomatoes

Ingredients:

  • 1 butternut squash, peeled and cubed
  • 2 tablespoons olive oil
  • 1 can chickpeas, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • ¼ red onion, finely chopped
  • ¼ cup fresh cilantro or parsley, coarsely chopped
  • 2 tablespoons pumpkin seeds
  • Salt and pepper, to taste

For the dressing:

  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey

Directions:

  1. Roast the squash: Preheat your oven to 400°F. Place the squash cubes on a parchment-lined baking sheet. Drizzle with 2 tablespoons of olive oil and season with salt and pepper. Toss to coat. Roast for 25 to 30 minutes, stirring halfway through, until the squash is tender and lightly browned.
  2. Make the dressing: In a small bowl, whisk together the olive oil, lemon juice, mustard, and honey. Season with a pinch of salt and pepper to taste.
