These Maple Dark Chocolate Muffins, created by nutritionist Stéphanie Côté, offer a delightful blend of wholesome ingredients and the indulgent taste of dark chocolate. They are perfect for a nutritious breakfast or a guilt-free snack.

Servings: 12 muffins

Ingredients:

  • 1 cup unsweetened apple sauce
  • 1/2 cup very dark maple syrup (for a strong taste)
  • 1/3 cup water
  • 1/3 cup vegetable oil
  • 2 eggs
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 cups whole wheat flour
  • 1 1/2 cups quick cooking oats
  • 1/3 cup dark chocolate, chopped
  • 1 1/2 tbsp maple sugar

Method:

  1. Prepare the Oven: Preheat to 350° F and position the rack in the center. Line 12 muffin cups with paper or silicone liners.
  2. Combine Wet Ingredients: In a large bowl, blend the apple sauce, maple syrup, water, oil, and eggs with a wooden spoon.
  3. Add Dry Ingredients: Sprinkle baking powder and baking soda over the mixture. Mix in the flour, oats, and chopped dark chocolate.
  4. Bake the Muffins: Divide the batter among the muffin cups. Sprinkle the tops with maple sugar. Bake for 25 minutes or until golden and a knife inserted comes out clean.
