Ingredients
- 2 tbsp fresh ginger, very thinly sliced
- 2 cinnamon sticks, broken into pieces
- 10 green cardamom pods
- 5 whole cloves
- 3 black peppercorns
- ¼ cup black tea leaves (e.g., Darjeeling, Orange Pekoe)
- ¼ cup maple flakes
Instructions
To Prepare the Tea Mix
- Preheat the oven to 250°F (120°C).
- Spread the sliced ginger on a baking sheet and bake for about 1 hour or until completely dried. Let cool.
- In a mortar and pestle (or spice grinder), coarsely crush the cinnamon, cardamom, cloves, and peppercorns.
- In a bowl, combine the crushed spices, dried ginger, black tea leaves, and maple flakes.
- Store in an airtight jar or tin for up to several weeks.
To Brew Maple-Flakes Chai Tea
- Place 4 tsp of the chai mix into a teapot or infusion ball.
- Pour over 1½ cups of boiling water (or maple water for extra flavor).
- Let steep for 5–7 minutes.
- Strain and enjoy!
To Make a Maple-Flakes Chai Tea Latté
- Place 4 tsp of the chai mix into a teapot or infusion ball.
- Pour in 1 cup boiling water + ½ cup hot milk of your choice (dairy or plant-based).
- Steep for 5–7 minutes, strain, and sip slowly.
