Whether served warm with a scoop of vanilla ice cream or drizzled with crème anglaise, this maple-apple upside-down cake is a nostalgic treat that’s perfect for cozy evenings or special occasions.
Ingredients
- 3 apples, peeled and cored
- ¾ cup maple syrup (preferably dark for a robust flavor)
- ½ cup unsalted butter
- ⅔ cup maple sugar
- 1 egg
- ¾ cup 2% milk
- Vanilla extract, to taste
- 1½ cups all-purpose flour
- 1 tbsp baking powder
- Pinch of salt
Method
- Preheat the oven to 375°F (190°C).
- Peel and core the apples, then slice them thinly. Arrange the slices in a criss-cross pattern in an 8-inch round or square baking pan. Set aside.
- In a saucepan, combine ¾ cup maple syrup and ¼ cup butter. Bring to a boil and let simmer for 5 minutes. Pour the mixture evenly over the apples.
- In a separate bowl, cream the remaining ¼ cup butter with the maple sugar until light and fluffy.
- Beat in the egg, then add the milk and vanilla. Mix in the flour, baking powder, and salt until well combined.
- Gently spread the batter over the apples in the pan.
- Bake for 30 to 40 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool for 5 minutes, then invert the cake onto a serving plate while still warm.
