World Cheese Day Celebrates One of the World’s Favorite Foods

From sharp cheddar to creamy Brie, cheese comes in hundreds of varieties enjoyed in kitchens around the world. On March 27, 2026, cheese lovers will have a reason to celebrate as World Cheese Day highlights the rich tradition and craftsmanship behind one of the most popular foods on the planet.

Whether melted on pizza, paired with fruit and crackers, or served as part of a gourmet meal, cheese appears in countless dishes from breakfast through dinner. Varieties such as mozzarella, Gouda, Camembert, Gruyère, halloumi, feta, and blue cheese each bring their own flavor, texture, and character to the table.

While the finished products may look and taste very different, most cheeses are made using a similar basic process that has been refined over centuries.

The first step in cheesemaking is curdling the milk, which transforms it from a liquid into a soft, gel-like solid. Cheesemakers achieve this by adding lactic acid bacteria, often called a ferment, or a natural coagulant such as rennet, which can come from plant or animal sources. In some cases, both are used together.

Once the milk thickens, the curd is cut into small pieces. This step separates the solid curds from the liquid whey. The size of the curds often depends on the type of cheese being produced, and they are then transferred into molds that shape the final product.

The molds allow excess liquid to drain away from the curds. The speed of this draining process can vary widely depending on the cheese. Sometimes the temperature is increased during this stage to create a firmer texture.

After the curds have formed into their shape, the cheese is typically removed from the molds and placed in a brine solution. The salt in the brine adds flavor while also acting as a preservative and helping protect the cheese from unwanted bacteria.

The final step is aging, also known as ripening. During this stage, the cheese is stored in carefully controlled environments where temperature and humidity allow it to mature. Over time, the cheese develops its unique rind, texture, color, and flavor.

Some cheeses are ready to eat within days, while others may age for months or even years before reaching their peak.

World Cheese Day offers an opportunity not only to enjoy favorite varieties but also to learn more about the craft behind them. Many creameries and cheese producers offer guided tours and tastings, giving visitors a closer look at the cheesemaking process and the chance to sample locally made products.

For anyone who appreciates good food, the day serves as a reminder of the long tradition and careful techniques that turn simple milk into one of the world’s most beloved ingredients.
