Berry and Mascarpone Crepes Make a Sweet Start to the Day
A plate of berry-and-mascarpone crepes can turn an ordinary morning into something special. Light crepes, rich cream filling, fresh berries, and a drizzle of maple syrup come together in a breakfast that feels both elegant and comforting.
This recipe serves four and makes about six to eight crepes. It is a good choice for a weekend breakfast, a family brunch, or a special-occasion meal featuring local berries.
The crepe batter begins with milk, eggs, sugar, and vanilla extract. Flour, salt, and melted butter are whisked in until smooth. Letting the batter rest for 10 to 15 minutes helps improve the texture before cooking.
The crepes are cooked in a buttered skillet for one to two minutes on each side, then set aside to cool. While they cool, heavy whipping cream is beaten until thick. Mascarpone cheese, powdered sugar, and more vanilla are added, then whipped until the mixture forms stiff peaks.

To assemble, place one crepe on a plate, spread a layer of mascarpone cream over the top, and add berries. Repeat the layers with the remaining crepes and filling. Strawberries, blueberries, blackberries, or raspberries all bring color and bright flavor to the dish.
Just before serving, garnish with extra berries and drizzle with maple syrup.
The result is a beautiful breakfast that looks impressive but uses simple ingredients. With fresh fruit, creamy filling, and soft crepes, it is a sweet way to celebrate berry season.
