Pasta with Tofu and Peas
Easy to prepare, this delicious meatless dish is perfect for busy diners looking for a quick and satisfying meal.
Ingredients

- 1 block of firm tofu, cubed
- 3 tablespoons vegetable oil
- 1 tablespoon sesame oil
- 1 cup button mushrooms, sliced
- 2 tablespoons soy sauce
- 1/2 cup frozen peas, cooked according to package directions
- 2 cups penne or other cooked pasta (reserve 1/3 cup of pasta water)
- Pinch of chili flakes
- Chopped parsley for garnish
- Salt and pepper, to taste
Directions
- Prepare the Tofu: Pat the cubes dry with a paper towel and season with salt and pepper. In a large frying pan, heat 2 tablespoons of vegetable oil and 1 tablespoon of sesame oil over medium heat. Add the tofu cubes and cook until browned on all sides. Remove from the pan and keep warm, leaving as much oil in the pan as possible.
- Cook the Mushrooms: Add the remaining tablespoon of vegetable oil to the pan. Add the sliced mushrooms and sauté until lightly browned, about 3-4 minutes.
- Combine Ingredients: Pour in the soy sauce and the reserved pasta water, stirring to combine. Add the cooked peas, pasta, tofu, and chili flakes. Cook for a few minutes, stirring occasionally, until the mixture is heated. Adjust the seasoning with additional salt and pepper if needed.
- Serve: Garnish with chopped parsley and serve hot.
