Spiced pumpkin muffins

Ingredients – Servings: 12

  • 1 3/4 cups all-purpose flour
  • 1 cup white sugar
  • 1/2 cup brown sugar
  • 1 teaspoon baking powder
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 2 eggs
  • 1 can pumpkin purée (15 ounces)
  • 1/2 cup melted butter

  • 1/2 cup pecans, coarsely chopped
  • 12 walnuts, whole
  • A few fresh mint leaves

Directions

  1. Preheat the oven to 375 F. Line a muffin tin with paper cups.
  2. Whisk together the flour, white sugar, brown sugar, baking powder, and spices in a large bowl. Set aside.
  3. In another bowl, combine the eggs, pumpkin purée, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix gently until the batter is smooth.
