Italian-Style Zucchini Rolls: A Cheesy, Savory Delight

Bring a taste of Italy to your table with these cheesy zucchini rolls. Light yet flavorful, they’re perfect as an appetizer, side dish, or light meal. With gooey bocconcini, rich tomato sauce, and fresh basil, these rolls are a simple way to turn everyday ingredients into something extraordinary.

Ingredients (Serves 4):

  • 1 medium-sized zucchini
  • 32 mini bocconcini (about 3/8 inch in diameter)
  • 1 1/2 cups homemade or store-bought tomato sauce
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • A few fresh basil leaves

Directions:

  1. Preheat the oven: Set your oven to 375°F (190°C).
  2. Prepare the zucchini slices: Using a vegetable peeler, slice the zucchini lengthwise into thin ribbons. Each ribbon should be wide enough to wrap around the cheese.
  3. Assemble the rolls: Place two mini bocconcini at one end of each zucchini slice. Roll the zucchini tightly to enclose the cheese, forming 16 small rolls.
  4. Arrange and bake: Place the rolls in a large ovenproof frying pan or baking dish. Pour the tomato sauce evenly over the rolls, then sprinkle with Parmesan cheese. Season with salt and pepper to taste.
  5. Bake to perfection: Bake in the preheated oven for 30 minutes, or until the sauce is bubbling and the cheese is slightly melted.
  6. Garnish and serve: Remove from the oven and garnish with fresh basil leaves. Serve warm and enjoy the Italian-inspired goodness.

These zucchini rolls pair beautifully with a crisp salad or crusty bread, making them a versatile addition to any meal.
