Maple-Flavored Feta & Mint Quinoa Salad with Maple Dressing

This light, refreshing salad is full of texture, color, and bright flavor. A hint of maple syrup in the vinaigrette adds warmth and balance, making it a perfect dish for spring and summer meals or any time you want something nourishing and vibrant.

Ingredients

For the Maple Dressing

  • 2 tbsp Dijon mustard
  • 2 tbsp white wine vinegar or lemon juice
  • 4 tbsp olive oil
  • 1 tbsp maple syrup (preferably amber, for a richer flavor)
  • 2 tbsp chopped chives or other fresh herbs (optional)
  • Salt and pepper, to taste

For the Salad

  • 2 cups cooked quinoa
  • ½ cup fresh mint, chopped
  • 1 cup crumbled feta
  • 1 can chickpeas, drained and rinsed
  • 12 cherry tomatoes, halved
  • 1 red onion, finely chopped
  • Salt and pepper, to taste

Instructions

Make the Dressing

  1. In a small bowl, whisk together the Dijon mustard and vinegar or lemon juice, then season lightly with salt and pepper.
  2. Slowly drizzle in the olive oil while whisking to emulsify the dressing.
  3. Stir in the maple syrup and optional herbs. Taste and adjust seasoning as needed.

Assemble the Salad

  1. In a large bowl, combine the quinoa, mint, feta, chickpeas, tomatoes, and red onion.
  2. Pour the maple dressing over the salad and toss gently to combine.
  3. Chill for 15–30 minutes before serving for the best flavor.
