Maple-Flavored Feta & Mint Quinoa Salad with Maple Dressing
This light, refreshing salad is full of texture, color, and bright flavor. A hint of maple syrup in the vinaigrette adds warmth and balance, making it a perfect dish for spring and summer meals or any time you want something nourishing and vibrant.
Ingredients
For the Maple Dressing
- 2 tbsp Dijon mustard
- 2 tbsp white wine vinegar or lemon juice
- 4 tbsp olive oil
- 1 tbsp maple syrup (preferably amber, for a richer flavor)
- 2 tbsp chopped chives or other fresh herbs (optional)
- Salt and pepper, to taste
For the Salad
- 2 cups cooked quinoa
- ½ cup fresh mint, chopped
- 1 cup crumbled feta
- 1 can chickpeas, drained and rinsed
- 12 cherry tomatoes, halved
- 1 red onion, finely chopped
- Salt and pepper, to taste
Instructions
Make the Dressing
- In a small bowl, whisk together the Dijon mustard and vinegar or lemon juice, then season lightly with salt and pepper.
- Slowly drizzle in the olive oil while whisking to emulsify the dressing.
- Stir in the maple syrup and optional herbs. Taste and adjust seasoning as needed.
Assemble the Salad
- In a large bowl, combine the quinoa, mint, feta, chickpeas, tomatoes, and red onion.
- Pour the maple dressing over the salad and toss gently to combine.
- Chill for 15–30 minutes before serving for the best flavor.
