Peppers Stuffed with Sausage Meat

Looking for a comforting recipe that’s bursting with flavor? These stuffed peppers are sure to become your new favorite go-to dish!

Ingredients

Servings: 4 (two pepper halves per person)

  • 4 bell peppers in various colors, halved lengthwise (keep the stems, if possible)
  • 16 ounces sausage meat (your choice)
  • 1 onion, finely chopped
  • 1 clove garlic, finely chopped
  • 1 cup cooked rice
  • 1 teaspoon Cajun spices (or your favorite spicy seasoning)
  • 1 cup store-bought tomato sauce
  • 1 tomato, chopped
  • 1 cup shredded strong cheese (such as medium cheddar or Monterey Jack)
  • 1 cup grated cheese that melts well (such as mozzarella or Gruyere)
  • Salt and pepper, to taste

Directions

  1. Prepare the Peppers: Remove the membranes and seeds from the halved bell peppers. Preheat your oven to 350°F (175°C).
  2. Cook the Sausage Mixture: Heat oil in a skillet over medium heat. Saute the sausage meat, onion, and garlic until the sausage is cooked and the onions are soft. Remove from heat and drain any excess fat.
  3. Mix the Stuffing: In a large bowl, combine the cooked sausage mixture with the cooked rice, Cajun spices, tomato sauce, chopped tomato, and shredded strong cheese—season with salt and pepper to taste.
  4. Stuff the Peppers: Fill the eight bell pepper halves with the sausage and rice mixture. Place the stuffed peppers in an ovenproof dish and cover with aluminum foil.
  5. Bake: Bake the peppers in the preheated oven for 30 minutes.
  6. Add the Melting Cheese: Remove the dish from the oven, remove the foil, and sprinkle the grated cheese (mozzarella or Gruyere) over the peppers. Return to the oven for an additional 10 minutes or until the cheese has melted and is bubbly. For a golden, crispy top, broil for 1-2 minutes.

This recipe works wonderfully with sausage meat, but ground beef or pork are great alternatives as well. Serve the stuffed peppers with a side salad or crusty bread for a satisfying meal!
