Ingredients:
- 1/2 lb ground chicken
- 1 tbsp canola or olive oil
- 2 ribs of celery, chopped
- 1 large carrot, chopped
- 1 clove of garlic, minced
- 3/4 cup dry green or brown lentils
- 1 cup maple water
- 1 cup chicken broth
- 8 oz crushed tomatoes
- 2 tbsp Italian spices
- 6 dry lasagna noodles (or 5 oz of Mafalda/short pasta)
- Herbs for garnish (optional)
Method:
- Brown the Chicken: In a large saucepan, heat oil over high heat. Add the ground chicken and cook for 3 minutes, breaking it into small pieces.
- Sauté Vegetables: Add celery, carrot, and garlic to the pan. Cook for an additional minute, stirring frequently.
- Cook Lentils: Incorporate lentils, maple water, and chicken broth into the saucepan. Cover and bring to a boil. Reduce heat and simmer for 20 minutes or until lentils are tender. Add more liquid as needed.
- Add Tomatoes and Pasta: Stir in crushed tomatoes and Italian spices. Break the lasagna noodles into the pan. Cover and simmer for 15-20 minutes until the pasta is fully cooked.
- Garnish and Serve: Optionally, sprinkle herbs over the casserole before serving.

- Pasta Variation: If you don’t have lasagna noodles, use mini lasagna noodles (mafalda) or another short pasta of your choice.
