Whether you’re planning a harvest-themed meal or just want to make the most of pumpkin season, this simple pumpkin soup recipe is sure to satisfy. It serves 6 to 8 people, making it a great option for small groups—and it’s easy enough for beginner cooks.

Why Pumpkin Soup?

Pumpkin soup isn’t just a cozy classic—it’s also nutritious, versatile, and a great way to use canned or fresh pumpkin. Sugar pumpkins (also called pie pumpkins) are best for cooking thanks to their naturally sweet and dense flesh, but you can also use the flesh from a standard carving pumpkin if needed. Ingredients:

  • 4 to 5 cups canned pumpkin puree (not pumpkin pie filling)
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream (or coconut milk for dairy-free)
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • Salt and black pepper, to taste
  • Optional garnishes: Sour cream or crème fraîche, fresh thyme or parsley

Instructions:

  1. Sauté the Aromatics:
    In a large pot, heat olive oil and butter over medium heat. Add chopped onion and sauté for 5–7 minutes until translucent. Stir in garlic and cook for another 1–2 minutes until fragrant.
  2. Simmer the Soup:
    Add pumpkin puree, broth, nutmeg, cinnamon, ginger, salt, and pepper. Stir well. Bring to a gentle boil, then reduce heat and simmer for 10 minutes.
  3. Blend Until Smooth:
    Use an immersion blender to puree the soup until silky smooth (or transfer carefully to a blender in batches). Stir in heavy cream or coconut milk. Adjust thickness with more broth or water, if needed.
  4. Serve and Garnish:
    Ladle soup into bowls. Garnish with a dollop of sour cream or crème fraîche and a sprinkle of fresh herbs, if desired.

  • A 15-ounce can of pumpkin puree equals about 1.75 cups. To get 4–5 cups, you’ll need about 2.5 to 3 cans (roughly 38–45 ounces total).
  • Always double-check your labels—pumpkin pie filling is not the same as pure pumpkin puree, and the added sugars and spices will change the flavor.
  • Add toasted pumpkin seeds or crusty bread on the side for extra texture and heartiness.
