Bake Your First Yule Log Cake Like a Pro This Christmas

If you’ve ever admired the classic holiday yule log cake but felt too intimidated to make one, this year might be the perfect time to give it a try. With a few expert tips and a little patience, even beginner bakers can turn out a delicious and beautiful dessert worthy of the Christmas table.

The yule log, also called a bûche de Noël, is a rolled sponge cake filled with cream or ganache and shaped to resemble a wooden log. The dessert is a holiday favorite in many homes, especially among those who enjoy combining traditional baking with a bit of creativity.

Start with the right sponge

To get your yule log started, you’ll need to make a sponge cake. A classic sponge is made with just flour, sugar, and eggs—no baking powder needed. The key is to beat the whole eggs until they triple in volume. This step helps your sponge turn out light and airy.

Bake your batter on a parchment-lined baking sheet. Make sure the paper covers the entire pan and reaches the edges. Bake according to your recipe’s instructions—most sponge cakes cook quickly, so don’t walk away from the oven!

Rolling without breaking

The part that scares most first-time bakers is the roll. But there’s a simple method that makes it easier and less stressful.

As soon as your sponge cake comes out of the oven, gently remove it from the pan. Place a new sheet of parchment paper slightly larger than your cake on a flat surface. Then, flip the cake onto the fresh parchment. Carefully peel away the original baking paper.

Now, using the clean parchment paper beneath the cake, gently roll it up. Don’t worry if it feels too warm—rolling while it’s still warm is actually what helps the cake hold its shape. Cover the rolled cake with a damp dish towel and let it cool completely.

Choose your filling

Once the cake is cool, unroll it and spread your favorite filling inside. Whipped cream, chocolate ganache, or even fruit jam all work wonderfully. Then re-roll the cake—again using the parchment paper to help you—into a nice log shape.

Now comes the fun part. Decorate the outside however you like. You can spread chocolate frosting to make it look like bark, dust it with powdered sugar for a snowy effect, or top it with chocolate shavings, berries, or even little edible meringue mushrooms.
