Ingredients (Serves 4)
- For the Crust
- ½ cup unsalted butter, room temperature
- ⅓ cup + 1 tablespoon powdered sugar
- 1 pinch salt
- 2 egg yolks
- 1 tablespoon ice water
- ¼ cup all-purpose flour
- For the Filling
- 4 eggs
- ⅔ cup sugar
- 1 tablespoon cornstarch
- ¾ cup freshly squeezed lemon juice
- 5 tablespoons butter, room temperature
- For Garnish
- 1 lemon, thinly sliced
- Fresh mint leaves
Directions
- Prepare the Crust
In a bowl, whisk together the unsalted butter, ⅓ cup powdered sugar, and salt until smooth and creamy. Add the egg yolks, ice water, and flour, mixing until a dough forms.
Knead the dough into a smooth ball, divide it into two equal parts, and wrap each in plastic wrap. Chill in the refrigerator for at least two hours. - Bake the Crust
Preheat your oven to 350°F. Roll out the chilled dough to about ¼-inch thickness. Cut out four 5-inch circles and press them into 4-inch tart molds, folding the edges neatly.
Place the molds on a baking sheet and bake for about 20 minutes or until lightly golden. - Make the Filling
In a small bowl, whisk together the eggs, sugar, and cornstarch. Heat the lemon juice in a saucepan, then slowly whisk in the egg mixture. Bring to a gentle boil and cook for about 3 minutes until thickened.
Remove from heat and stir in the butter until the filling is smooth and glossy. - Assemble the Tarts
Let the crusts cool, then pour the lemon filling into each shell. Sprinkle with powdered sugar and garnish with a thin lemon slice and fresh mint leaves. Chill until ready to serve.
These tarts are a beautiful centerpiece dessert, combining bright, citrusy flavors with a melt-in-your-mouth texture. Every bite offers the perfect balance of tangy and sweet, making them irresistible for guests and family alike.
