When it comes to desserts that dazzle, lemon tarts are a clear winner. These delicate, tangy treats are the perfect addition to any holiday spread, blending buttery crusts with a creamy citrus filling that’s as refreshing as it is indulgent. With their golden crust, smooth lemon filling, and elegant garnishes, these tarts deliver bakery-level charm right from your kitchen. They might look fancy, but they’re surprisingly simple to make.

Ingredients (Serves 4)

  • For the Crust
    • ½ cup unsalted butter, room temperature
    • ⅓ cup + 1 tablespoon powdered sugar
    • 1 pinch salt
    • 2 egg yolks
    • 1 tablespoon ice water
    • ¼ cup all-purpose flour
  • For the Filling
    • 4 eggs
    • ⅔ cup sugar
    • 1 tablespoon cornstarch
    • ¾ cup freshly squeezed lemon juice
    • 5 tablespoons butter, room temperature
  • For Garnish
    • 1 lemon, thinly sliced
    • Fresh mint leaves

Directions

  1. Prepare the Crust
    In a bowl, whisk together the unsalted butter, ⅓ cup powdered sugar, and salt until smooth and creamy. Add the egg yolks, ice water, and flour, mixing until a dough forms.
    Knead the dough into a smooth ball, divide it into two equal parts, and wrap each in plastic wrap. Chill in the refrigerator for at least two hours.
  2. Bake the Crust
    Preheat your oven to 350°F. Roll out the chilled dough to about ¼-inch thickness. Cut out four 5-inch circles and press them into 4-inch tart molds, folding the edges neatly.
    Place the molds on a baking sheet and bake for about 20 minutes or until lightly golden.
  3. Make the Filling
    In a small bowl, whisk together the eggs, sugar, and cornstarch. Heat the lemon juice in a saucepan, then slowly whisk in the egg mixture. Bring to a gentle boil and cook for about 3 minutes until thickened.
    Remove from heat and stir in the butter until the filling is smooth and glossy.
  4. Assemble the Tarts
    Let the crusts cool, then pour the lemon filling into each shell. Sprinkle with powdered sugar and garnish with a thin lemon slice and fresh mint leaves. Chill until ready to serve.

These tarts are a beautiful centerpiece dessert, combining bright, citrusy flavors with a melt-in-your-mouth texture. Every bite offers the perfect balance of tangy and sweet, making them irresistible for guests and family alike.
