Swirled Yule Log with Raisins

This stunning Swirled Yule Log brings a festive twist to your dessert table. With its light sponge, rum-infused sweetness and a swirl of raisins, cocoa, and vanilla, this treat is a show-stopper for any holiday celebration.

Ingredients (Serves 12):

  • 8 eggs
  • 2 cups white sugar
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 2 tablespoons cocoa powder
  • 1 cup golden raisins, divided
  • 1 cup black raisins, divided
  • 1/2 cup spiced rum (or spiced simple syrup for a non-alcoholic version)
  • 2 cups powdered sugar
  • 2 tablespoons milk
  • A few walnuts, coarsely chopped
  • A few fresh mint leaves

Instructions:

  1. Preheat the Oven:
    Preheat your oven to 350°F (175°C).
  2. Prepare the Batter:
    In a stand mixer, beat the eggs and sugar for five minutes until pale and fluffy. Gradually add the flour and baking powder, mixing until smooth. Divide the batter evenly into two bowls. Add the vanilla extract to one bowl, stirring well. Add cocoa powder and half of the golden and black raisins to the second bowl, mixing until combined.
  3. Bake the Cake Layers:
    Line two rectangular baking sheets with parchment paper and spray with non-stick cooking spray. Pour each batter into its own prepared sheet. Bake for 10 minutes, then remove from the oven and let cool for 15 minutes on wire racks.
  4. Cool and Infuse:
    Carefully lift the cakes with their parchment paper and place them on cooling racks. Brush each cake generously with spiced rum (or spiced syrup). Allow them to cool completely, about an hour.
  5. Prepare the Frosting:
    In a small bowl, combine powdered sugar and milk until smooth. Adjust consistency as needed.
  6. Assemble the Yule Log:
    Gently invert the chocolate cake onto the vanilla cake, aligning the edges. Remove the top layer of parchment paper. Using the bottom parchment sheet, carefully roll the cakes into a tight spiral to form the Yule log.
  7. Frost and Garnish:
    Spread the frosting evenly over the log. Garnish with chopped walnuts and the remaining golden and black raisins. Add fresh mint leaves for a festive touch.
