  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 2 leeks (white parts only), thinly sliced
  • 2 potatoes, peeled and diced
  • 3 cloves garlic, finely chopped
  • 4 cups chicken or vegetable stock
  • 1 tablespoon truffle oil (optional)
  • 3/4 cup 35% heavy cream
  • Salt and pepper, to taste
  • A few leaves of fresh Italian parsley

Directions:

  1. In a large pot, melt the butter and olive oil over medium-high heat. Add the leeks, potatoes, and garlic. Sauté for about five minutes, allowing the vegetables to soften. Season with salt and pepper.
  2. Pour the stock into the pot and bring the mixture to a boil. Reduce the heat and let it simmer for three minutes before removing from the heat.
  3. Using an immersion blender, puree the soup until smooth. Stir in the truffle oil (if using) and heavy cream. Blend again to achieve a velvety texture. Taste and adjust the seasoning with more salt and pepper if needed.
