Mexican-Style Grilled Corn on the Cob Adds Bold Flavor to Summer Cookouts
Sweet summer corn gets a flavorful upgrade in this simple grilled recipe inspired by classic Mexican street corn. A blend of spices, crumbled cheese, fresh cilantro, and a squeeze of lime creates a colorful side dish that’s ready in minutes.
Whether cooked on an outdoor grill or an indoor grill pan, this recipe serves four and pairs well with burgers, grilled chicken, steak, or seafood.
Ingredients
2 tablespoons olive oil
1 tablespoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
4 ears of corn, husked
1/2 cup crumbled cotija or feta cheese
1/2 cup chopped fresh cilantro
1 lime, halved
Directions
Preheat an outdoor grill or grill pan to medium-high heat.
In a small bowl, combine the olive oil, paprika, garlic powder, and onion powder.
Brush each ear of corn evenly with the seasoned oil mixture.
Place the corn directly on the grill and cook, turning every few minutes, until the kernels are tender and lightly charred on all sides, about 10 to 12 minutes.
Remove the corn from the grill and immediately sprinkle with the crumbled cotija or feta cheese and chopped cilantro.
Squeeze fresh lime juice over each ear just before serving.
Serve hot as a side dish for your favorite summer meal.
