Blackberry Chia Pudding: A Tasty Treat That’s Big on Nutrition, Low on Calories

This simple dish blends the natural sweetness of blackberries with the superfood power of chia seeds, creating a creamy, nutritious pudding that fits just about any diet. Blackberries are more than just a summer fruit. They’re packed with antioxidants, the compounds that help your body fight off damage from pollution, aging, and stress. A cup of blackberries provides about half your daily vitamin C needs, along with vitamin K, manganese, and a healthy dose of fiber — all for just around 60 calories. Chia seeds, meanwhile, are tiny nutritional giants. Two tablespoons offer fiber, protein, omega-3 fatty acids, and key minerals like calcium and magnesium.

Cover and refrigerate the pudding for at least four hours or overnight. As the chia seeds soak, they absorb the liquid and form a thick, pudding-like texture.

To serve, divide the pudding into two bowls or jars. For added creaminess, top each with ¼ cup of plain Greek yogurt or a plant-based option like coconut yogurt for a vegan version. Add a spoonful of extra blackberries for color and flavor, and if you like a bit of crunch, sprinkle on 2 tablespoons of chopped walnuts or almonds.
