Maple Mango Jam
Sweet tropical mangoes meet the rich, caramelized notes of maple sugar in this sunny and simple homemade jam. With just three ingredients and no pectin, it’s the perfect way to capture the taste of summer, any time of year.
Ingredients
- 6 fresh, ripe Ataulfo mangoes, washed, peeled, and sliced
- 2¼ cups fine maple sugar
- Juice of 1 lemon
Instructions
- Prepare the fruit: In a large saucepan, combine the sliced mangoes, maple sugar, and lemon juice. Stir well.
- Macerate: Remove from heat and let the mixture macerate in the fridge overnight. This allows the fruit to release its juices and enhances the flavor.
- Cook the jam: The next day, bring the mixture to a boil and cook for 15 minutes, stirring regularly.
- Test for doneness: To check if your jam is ready, place a small drop on a cold plate (chilled in the fridge or freezer). If it sets slightly and wrinkles when pushed with your finger, it’s done.
- Blend and jar: Use an electric hand mixer to blend the jam to your preferred consistency. Pour into sterilized jars, seal, and allow to cool.
