Dominic Palmieri, the LA County Fair Midway Gourmet, has twisted the classic banana split into something new: the dill pickle split. This unusual treat features a pickle split down the middle, like a banana, and topped with sour spaghetti candy strings and pineapple whip. A surprising mix of tangy, sweet, and sour promises a flavor explosion.

The Candied Pickle

Palmieri continues to push culinary boundaries with his candied pickle. This creation involves a giant cored pickle stuffed with sour spaghetti candy, wrapped in a fruit roll-up, and dusted with Tajin seasoning—a Mexican spice blend made with chili, lime, and salt commonly used on fruit. The pickle is then drizzled with chamoy sauce, a sweet, salty condiment from pickled fruit. The result is a complex, mouth-puckering treat that combines multiple flavor profiles in each bite.

Fruit Roll-Up Delights

Fruit roll-ups are making a big splash in fair food this year. At the San Diego State Fair, vendors wrap freeze-dried fruit roll-ups around cotton candy and stuff them with sour gummy worms. This concoction is a colorful, sweet, and tangy treat that will catch fairgoers’ eyes and taste buds.

Caviar Funnel Cake
