Different Shapes, Same Dough: What Sets One Pasta Apart From Another?

Walk down the pasta aisle, and you’ll find dozens of shapes, from spaghetti and penne to fusilli and rigatoni. While they may look different, most traditional dried pasta is made with the same ingredients.

According to Barilla, classic dried pastas such as spaghetti, penne, and fusilli are all made from just two ingredients: durum wheat semolina and water. The difference is the shape. Manufacturers push the dough through specially designed dies to create each style, then dry it.

Italian law helps preserve that tradition. Research published by Springer Nature notes that dried pasta sold in Italy can only be made with durum wheat semolina and water, without additives or preservatives.

One major exception is egg pasta.

Popular egg noodles, often served with chicken and noodles in the Midwest, are made with softer wheat flour and eggs, giving them a more tender texture.  Italian favorites such as fettuccine and tagliatelle also fall into the egg pasta category.

The distinction has regional roots in Italy. According to the Italian mill Mulino Padano, egg-based pasta became a staple in northern regions like Emilia-Romagna, while southern Italy is better known for egg-free semolina shapes such as orecchiette.

Pasta shape isn’t just about appearance—it also affects how well a sauce clings to the noodles.

Ridged and tubular pastas like rigatoni are designed to capture hearty meat sauces and chunky vegetables, while thinner noodles such as spaghetti pair better with lighter sauces that coat rather than fill. Pasta made with traditional bronze dies has a rougher surface that holds sauce more effectively than smoother, machine-finished pasta.

For shoppers looking for something truly different, the biggest changes aren’t in the shape but in the ingredients. Chickpea, lentil, whole wheat, and gluten-free varieties made from corn or rice are all made from different grains or legumes, giving them unique flavors, textures, and nutritional profiles.
