Gourmet Halloumi Burgers Bring Bold Flavor to the Summer Table
These vegetarian burgers feature golden slices of halloumi cheese, crisp vegetables, and a cool herb sauce for a fresh and satisfying summer meal.
Halloumi holds its shape when cooked, making it a good choice for burgers. Frying the cheese for a few minutes on each side gives it a crisp, browned exterior while keeping the inside firm and tender.
The recipe serves two.
Ingredients
1/3 cup plain Greek yogurt
1 tablespoon mayonnaise
1 tablespoon chopped fresh dill
1 tablespoon chopped fresh parsley
1 small garlic clove, grated
1 teaspoon lemon juice
Pepper, to taste
1 package halloumi cheese, about 8.8 ounces
1 tablespoon olive oil
2 sesame seed hamburger buns
4 large Boston or romaine lettuce leaves
4 to 6 thin cucumber slices
1 ripe tomato, sliced
1 small red onion, thinly sliced into rings
Fresh parsley or dill, for garnish
Directions
In a small bowl, combine the Greek yogurt, mayonnaise, dill, parsley, garlic, and lemon juice.
Season with pepper, stir well, and refrigerate until ready to use.
Cut the halloumi into four thick slices.
Heat the olive oil in a frying pan over medium-high heat. Add the halloumi and cook for two to three minutes on each side, until golden brown.
Cut the buns in half and lightly toast them in an oven, toaster, or dry skillet.
Spread a generous amount of the herb sauce over the bottom half of each bun.
Top each bun with lettuce and cucumber. Add two slices of cooked halloumi, followed by tomato and red onion.
Spoon a little more sauce over the vegetables and garnish with fresh parsley or dill.
Add the top halves of the buns and serve immediately.
