Tucked behind a local gym in Front Royal, Mark-Pierre Jansen is transforming his passion for coffee into a vibrant business. As the owner and roaster at Cypress Street Roasters, Jansen focuses on delivering fresh, single-origin coffee roasted with care and precision.

The journey began in 2020 when Jansen started roasting coffee as a small-scale side project. “I’ve always loved good coffee,” he explained. “It’s fascinating how factors like altitude, weather, and a roaster’s technique can create such unique flavor profiles.” Armed with a top-of-the-line Giesen drum roaster, Jansen combines modern tools with artisan methods to highlight the natural character of every bean.

The Art of Roasting Coffee

Coffee roasting is a delicate balance of art and science. Jansen shared insights into the process, which starts with green beans undergoing a drying phase, followed by the Maillard reaction—a transformation that brings out the beans’ rich brown color and complex flavors. The final stage, called the development phase, ensures that the beans are evenly roasted from the inside out.

“The goal is to cool the beans quickly to preserve their flavor,” Jansen explained, demonstrating his roaster’s built-in cooling tray. “Mass-market coffee is often over-roasted, but stopping before that point helps retain the bean’s original qualities.”

Cypress Street Roasters offers only single-origin beans, never blends, so customers can experience the unique characteristics of each coffee’s region, or “terroir.” Soil, altitude, and processing methods all play a role in creating the distinct flavor notes in every bag.

Freshness at the Forefront

Cypress Street Roasters emphasizes freshness by printing roast dates on every bag, unlike supermarket coffee that can sit for months. Jansen also avoids pre-grinding the beans, encouraging customers to grind just before brewing to achieve the best flavor.

“If you’re looking for better coffee at home, invest in a grinder,” he advised. “It makes a huge difference.”

The roastery offers subscription services, delivering fresh coffee to Front Royal locals. Regional customers can enjoy a $5 flat-rate shipping or free shipping with a subscription. Each month, a new selection of curated single-origin beans roasted to perfection is featured.

Bringing Better Coffee to the Community

Jansen hopes to introduce Front Royal to a new level of coffee appreciation, encouraging people to savor it like a fine wine. “Many people are used to coffee as a basic commodity, but it’s so much more,” he said.

Looking ahead, Jansen envisions sourcing beans directly from farmers in coffee-growing regions. For now, his focus remains on growing Cypress Street Roasters’ local presence and creating a more meaningful coffee experience for the community.
